Slow Cooker Apple & Ginger Cake

This recipe is a great way to use up windfall apples. It’s a moist, tasty cake that is quite pudding-y (especially if you use 350gms of apples which the photos below illustrate) and keeps well in the fridge. 

It works well in a slow cooker that is wider than it is high.  But if yours is higher than it is wide, it’s still worth trying. This recipe takes 3 hours in our slow cooker but remember that even if dishes take a lot longer in a slow cooker than they would do in the oven, they still use significantly less energy. The hourly energy use of our slow cooker is 0.1kWh which costs about 3p. Which means this cake costs about 10p to cook.


The ingredients below are for a two-litre slow cooker.

150 gms flour
80 to 120gm sugar (depending on how sweet you want the cake)
2 medium eggs
250-350gms chopped eating apples (no need to peel)
3 tblspns oil or butter
1.25 tspn baking powder
1 tspn cinammon powder
2 tspn ginger powder (could add grated fresh too – spices help compensate if you use less sugar)

1/2 cup of chopped walnuts/pecans or sliced crystalised ginger (optional for topping)



1. Switch slow cooker on to heat up while you are prepping ingredients.

2. Mix flour, baking powder, sugar, spices in a bowl.

3. Chop apples, with approximately half in larger pieces (about 2cm x 1cm) if you like to keep some apple distinct. Smaller pieces dissolve into the sponge.

4. Make a well in the middle and pour in oil and eggs. Stir well.

5. Stir in chopped apples until evenly coated (the cake mixture only just covers the apples at this point)

6. Line slow cooker with baking/parchment paper.

7. Spoon mixture in. Sprinkle nuts (which are nice if you toss them in a frying pan for a few minutes first) or crystalised ginger on the top if desired.

8. Place tea towel under the lid to absorb the condensation so the top of the cake doesn’t get soggy.

9. Cook for 2 hours on full.  Test with a knife down the middle. If it comes out clean the cake is done (even if the cake is sticky on the top in the middle it might actually be cooked inside just fine).

10. If it needs more cooking but the edges are starting to burn, turn down to half and cook for another 30 – 60 minutes.

Total cooking time: 3 hrs
