Egg Mayonnaise on Lettuce

Thanks to Pat Perry for sending in another easy recipe.

Ingredients (serves two)

  • Four medium eggs
  • Half tin of sweetcorn
  • Light mayonnaise
  • A lettuce with firm leaves like little gem, endive or radicchio
  • Seasoning
  • Black pepper, chilli flakes, paprika, finely chopped chives to garnish (optional)


  1. Boil eggs until hard (five minutes+).
  2. Peel and roughly chop the eggs.
  3. Stir in 1.5 tbspn mayonnaise and drained sweetcorn.
  4. Arrange the lettuce leaves on a platter.
  5. Spoon the egg mayonnaise onto the leaves.
  6. Refrigerate until cold.
  7. Eat with your fingers as a light lunch or serve as a canapé at parties.
