Another way to use up marrow:

Ingredients

1 marrow (if it is a large marrow with tough skin, I would peel most of the skin off. If it is an overgrown courgette like below you can leave it on).
3 cloves of garlic
fresh herbs
cherry tomatoes
apple
oil (I used Stainswick Farm’s Oak Smoked Rapeseed Oil)
vinegar (I used balsamic)

Method

Dice and cook the marrow and garlic (I cooked it with a splash of oil in a microwave rice cooker for 5 minutes).
Leave to cool.
Chop up  and add cherry tomatoes, herbs and anything else you fancy. I added apple as the herbs included sage which was quite strong and needed some sweetening.
Drizzle a bit of vinegar and season to taste.
Put in the fridge to chill.
