Couscous, coriander & pomegranate-seed salad

This salad is very versatile and you can add (more or less) whatever you have in the fridge. We just happened to have pomegranate seeds and some fresh chickpeas that we have grown but normal peas or sweetcorn or finely chopped pepper would give a nice crunch too.


  • Couscous.
  • Salad veg eg chopped pepper, spring onions, sweetcorn.
  • Chopped herbs (we like coriander but you can chose).
  • Dressing – we used Stainswick Farm’s Lime, chilli and coriander dressing but you can make it yourself: here’s a recipe I found online.


  • Pour couscous into a bowl and cover with boiling water about an inch above the level of the couscous. Cover and leave.
  • After 10 minutes take off the cover and fluff with a fork. Leave to cool.
  • Stir in all the chopped veg and herbs.
  • Generously drizzle with dressing and enjoy!
