Some weeks we feel guilty for living on supermarket pizza but the saving grace is that we slather it in homemade coleslaw. Leftovers get put in cheese sandwiches or munched as a midnight snack.
Here is Brian’s very loose recipe:
Equal quantities of raw cabbage (any kind) and carrot.
Apple and/or grapes
Either grate carrot and finely slice cabbage or bung in a blender (carrots first as they take longer).
Put in a bowl and add chopped chives and equal quantities of chopped spring onion and chopped apple or grapes (cut the onions, the apples and the grapes to about the same size as each other, say to the size of a peanut).
Stir in two tablespoons of mayonnaise, add a bit of salt and pepper and let sit in the fridge for 15 minutes.
Before you serve, sprinkle on the top more chopped chives and chopped seeds and nuts of your choice.
