Pulled Shoulder of Hogget

Serves – 6
Preparation Time – 25 Minutes
Cooking Time – 4 Hours

  • 2kg whole hogget shoulder on the bone
  • 1 Teaspoon Umami paste: tomato puree, crushed garlic, diced mushroom, lemon zest, anchovies, salt, balsamic vinegar
  • 3 Teaspoons Herb & Spice Blend: mint, salt, garlic, coriander, pepper, rosemary, oregano, sunflower oil
  • 1 large onion chopped
  • 1 Lamb Stock Cube
  • 30ml Rapeseed Oil
  • 1 Large Red Chilli, Deseeded and Finely Chopped
  • 1 Whole Lemon, squeezed for juice
  • 300ml Red Grape Juice

Preheat the oven to Gas Mark 3, 170C, 325F. To prepare the Spice Rub, take a small bowl and mix all the ingredients together, except the Red Grape Juice.

Sprinkle the bottom of a non-stick roasting tin with the chopped onion and place the Shoulder of Hogget on top and coat the joint all over with the Spiced Rub. Pour the red grape juice around the joint then cover with baking parchment and then foil. Roast for 4 hours, turning the joint halfway during cooking. Before making a sauce from the cooking juices ensure that you strain off ALL THE FAT.

Once cooked remove from the oven and place the joint on a chopping board and “Pull” the cooked Shoulder of Hogget apart by securing the joint with a fork and shredding the meat with another fork.


Middle Eastern Meatloaf

Serves – 4
Preparation Time – 20 Minutes
Cooking Time – 40 to 45 Minutes

  • 125g Bulgar Wheat
  • 1 Orange Zested
  • 1 White Onion, finely chopped
  • 2 Carrots, coarsely grated
  • 250g Hogget Mince
  • 2 Teaspoons of Cinnamon
  • 2 Tablespoons of Pine Nuts
  • 50g Sultanas
  • 2 Eggs, beaten

Preheat the oven Gas Mark 5, 190C, 374F. Grease and line the base of a 1.5kg (12cm x 22cm) Loaf Tin. Cook the Bulgar Wheat in a pan of boiling water as per the instructions on the packet. Cool slightly then drain well and tip into a large bowl.

Stir in the Hogget Mince, Orange Zest, Onion, Carrots, Cinnamon, Pine Nuts and Sultanas into the Bulgar Wheat. Add the beaten Eggs, with pinch of Salt and Pepper before mixing all the ingredients together ensuring that they are all combined.

Transfer the mixture to the prepared Loaf Tin and press down very firmly with the back of a spoon. Place in the Preheated Oven and Bake for between 40 to 45 Minutes until cooked thoroughly through and nicely browned. Once cooked turn out the Loaf and slice ready for serving.
